As Italian as you can get, this was a dish my mom made all the time!!! I wish I could say you could use “any” rice to make this, but Arborio is the rice you should use for this dish. Thankfully you can now find this type of rice anywhere nowadays. Enjoy! —————————————————————- Ingredients: 2 tbsp butter 1/3 cup chopped onions 2 tsp minced garlic 4 cups chicken broth 1 cup arborio rice 1/4 cup grated Parmesan cheese 2 medium sized tomatoes, diced Handful of basil leaves Salt & Pepper to taste —————————————————————- Directions: In a saucepan over medium heat, melt 1 tbsp of butter. This is also an Italian-American dish. Which means, if you go to Italy, you will not find it. I first had this soup at Olive Garden and I loved it so much I searched high and low for a recipe, and I tweaked this enough to make it as close to the original as possible. Sometimes if I am pressed for time or feel lazy I do this in my Instant Pot and it comes pretty good too! Enjoy! —————————————————————- Ingredients: 1lb Italian Sausage 3 cloves Garlic, Minced 1 large Onion, Chopped 32oz chicken broth 4 large potatoes, diced 1 bunch of Kale, chopped 3/4 cup Heavy Cream Salt, Pepper, grated Parmesan —————————————————————- Directions: In a large pot, over medium heat, cook sausage until browned and no longer pink. Add garlic and onion and let cook until golden, 5 minutes. Season with salt and pepper. Add chicken broth and potatoesRead More →

This is an Italian-American dish. Which means, if you go to Italy, you will not find it. No restaurant will have it. However, plenty of “Italian” restaurants in the United States, most actually, will serve this dish. My aunt had an Italian Restaurant in New Mexico and that’s when I first ate it. Interestingly enough, my mom used to make a similar dish, just without the sauce and the cheese on top and serve it with a salad. My husband loves it when I make it that way because he feels it’s really healthy. I tried many different versions of this dish and I finally came up with this particular recipe and I really like it. Enjoy! —————————————————————- Ingredients for a family of 4: 4 Boneless & Skinless chicken breast halves 1 tsp Salt 1/4 tsp Black Pepper 1 cup Flour (optional) 2 Eggs (optional) 1 cup Breadcrumbs (seasoned) 1/2Read More →

Because I am Italian, I’m always asked to give people recipes to make this and that. The truth is that aside the staples, I only learned to cook a variety of foods just recently, which includes a lot of Italian dishes and quite a bit of desserts. The reason why only recently? Because I worked too much beforehand. My ex-husband and I had separate shifts and hardly ever ate together. When I got remarried and I was my son’s full time nurse in the early 2000s I was able to actually try my mom’s, my grandma’s, my aunt’s and my friend’s recipes, which I started to truly enjoy. Starting today I will start sharing my best recipes, perhaps one a month or so. I hope you enjoy! This first recipe I changed a little bit from the many different versions I tried. My mom and dad in Italy started usingRead More →
